2012 Woodstock Pilots View Shiraz, Like it’s namesake Doug Collett, this 2012 Pilot’s View Shiraz shows plenty of animation and character with a powerful yet balanced structure. Dark berries, plum and chocolate nuances with some mint, vanilla and spice highlight the underlying savory tones and well integrated oak characters. Supple, textured tannins leave you wanting more. Although cellaring will be rewarded for up to 8 years, we recommend this wine to be served for dinner with a great meal tonight! Deliberately made to accompany food by expressing soft fruit characters with moderate oak influence, Pilot’s View is sourced from our better Woodstock Estate and Blewitt Springs Shiraz blocks grown on sandy soils. The 2012 warm, sunny days ensured the berry flavors and tannins fully ripened, while cool nights preserved the natural acidity. The combination of sandy soils and natural acids creates vibrant floral and spice aromas in this Shiraz. With traditional winemaking and careful barrel selection, the supple tannins are well integrated supporting the juicy Shiraz flavours. This wine is matured in carefully selected new and second year old American oak, for up to 12 months. Flying Spitfires during WWII, Douglas Collett A.M was privileged to a pilot’s eye-view of the vineyards of Europe. Returning home, Doug saw the future for an Australian table wine industry, moving on from fortified styles. Equipped with animation initiative and perseverance, Doug planted many vineyards and made wines in many regions. He loved the natural beauty and robust flavors of McLaren Vale, acquiring Woodstock Estate in 1973. Suggested Drinking Window : Between 2013 and 2025 Three Word Taste Summary : black cherry , dark chocolate , full Tasting Notes:  Medium body in style with a long lingering finish and classic Grenache texture. Cellaring will also be rewarded for 4 to 5 years as the secondary characters evolve in bottle. Vintage Notes:  As per tradition, after fermentation, we add 15% Tempranillo to our old vine Grenache for savoury tannins, spice and complexity. The attractive berry flavours of Grenache are lengthened and enhanced by this variety, without imparting any strong oak influence. Alcohol – 15% pH – 3.43 Acidity – 6.3 g/l Residual Sugar – 0.9 g/l
