2015 Climbing Cabernet Sauvignon  . Climbing wines are sourced from the higher elevation of our Estate grown vineyard above 600m (Orange appellation). They exhibit elegant yet intense fruit characters courtesy of low-yield vines set on ancient soils in the classic cool climate Orange appellation. They are testament to our high quality, cool climate winemaking in the region. The Climbing name is inspired by the higher elevation vines that give such a unique character. The label imagery was drawn from an 1880’s ‘Dive Circus’ poster, with the dashing ‘Henry’ scaling heights inspired by the local extinct volcano peak, Mount Canobolas. Try our suggestions below. 2015 Climbing Cabernet Sauvignon TASTING & VINTAGE NOTES TASTING NOTES Rich red with purpled edges. A rich but elegantly structured wine with subtle integrated oak adding the complexity of dark chocolate and cigar box to the wine. VINTAGE NOTES Following post ferment maceration, the wine was gently drained and pressed off skins. Both blocks were then matured in French oak barriques for 12 months. Following barrel maturation, the two blocks were blended, lightly egg white finned to help soften tannins and then filtered for bottling.   Orange NSW Wine Region Tasting Notes
