Description
2013 Tom and Mitch Australian Shiraz Cabernet Blend
2013 Tom and Mitch Australian Shiraz Cabernet Blend, Tom & Mitch Wicks ( sons )are just like Shiraz & Cabernet, both can stand up for themselves but together they just work seamlessly.
A bold red, ready for anything. Great for BBQ’s and every other occasion really.
An excellent 2012/13 growing season gave rise to a well-balanced Cabernet crop, with picture perfect clusters of tiny berries spread evenly through the fruiting zone. This is a well-balanced red blend that is ideal for drinking over the next
few years. Savory and slightly earthy aromas with a sprinkle of black pepper. The palate is seamless and balanced with a nice mix of fruit, oak and tannin. It’s almost medium bodied and would be per-fect with light pasta dishes.WINEMAKING
WINEMAKING
Individual parcels were subjected to a range of processing techniques, with various yeast strains and cap management strategies employed. Ferments were either pumped over or plunged twice daily in a range of
small open and static fermenters. Each parcel spent between 8-14 days on skins prior to being gently pressed. The individual parcels were then racked into barrel prior to final barrel selection and ultimately blending.
